These oven-baked green beans are an easy veggie and healthy dish that requires just 5 simple ingredients and 20 minutes of cooking time, 15 of which you can go about your business, leaving all the work to your oven.
All you need are fresh green beans, salt, olive (or you're preferred) oil, sesame seeds, and some nuts (I have cashews). Oven green beans are a versatile dish, they are light and unusual, and can be a side dish for a festive dinner, and at the same time, they are very easy to prepare to become your favorite for weekday lunch!
Let me tell you a secret – I like fried and crispy green beans and for a long time my favorite recipe has been deep fried green beans in the batter. I have never liked dishes in which the pods are cooked with other juicy vegetables and become moist and mushy. Therefore, for a long time, healthy food and green beans were not compatible concepts for me, but only until I found this great recipe! Now I often cook it for dinner – the dish is easy to digest, low in calories, but at the same time rich in protein, fiber and vitamins.
The preparatory stage takes no more than 5 minutes of time, because all you need is to thoroughly wash the pods and remove the tails and, if necessary, streaks. Blot the beans with a napkin so that there is not a lot of moisture left – especially if, like me, you do not like softened pods. Sprinkle them with oil, add a little salt, and place them on parchment paper. If you decide to cook this dish for a big company and double the recipe, then make sure that the beans do not lie in a thick layer, it is better to bake them in two approaches.
Consider the characteristics of your oven; baking times can vary, so when you cook the pods for the first time, make sure the beans are tender and crispy with caramelized spots. Do not fry the green beans until charred.
Variations
I often cook green beans in the oven and to keep it from getting boring, can offer you a few simple additives that will make it new and unusual every time. Pick one or two (okay, maybe three) options.
Here are some ideas:
Lemon zest and/or lemon wedges
Parmesan finely grated
A small handful of fresh basil, mint, parsley, garlic, or green onions, finely chopped
Sprinkle lightly with red pepper flakes
A little balsamic vinegar

Ingredients

  • 1 lb green beans
  • 2 tbsp olive oil
  • tsp sea salt
  • 1,5 tbsp sesame seeds
  • 3 tbsp cashew nuts

Instructions

  • Choose fresh, bright green beans.
  • Wash the beans thoroughly. If there are damaged areas, cut them out. Blot the pods with a napkin to remove the remaining water.
  • Sprinkle the beans with olive oil, salt and mix thoroughly.
  • Place the beans on a baking sheet on parchment paper.
  • Sprinkle with sesame seeds.
  • Sprinkle with cashew nuts or other nuts.
    And then bake in the oven at 356 °F for 15 minutes.
  • When the beans are baked, put them on plates and serve hot.
