But if you add some fruit to it, it turns into a great dessert. And super heathy! This is probably one of the healthiest ways to satisfy your sweet tooth. This superfood is rich in protein, fiber and antioxidants, so you won't feel guilty after consuming it!And I have another great news - making chia pudding with fruit puree is super easy! I will be using pineapple and banana today, but you can use the fruit or berries that you have in stock. The fruit puree is already quite thick on its own, so we'll add a little amount of lactose-free milk to it. I use homemade unsweetened almond milk, but you also can use coconut, nut milk, or even oatmeal. If you don't have milk or just don't want to use it, you can add just filtered water.Chia seeds combine with liquid to form a gel-like substance that resembles a pudding in texture. So, all you need is to blend the fruit, add the chia seeds and lactose-free milk, and refrigerate this mix for 1-2 hours to thicken. Optionally, you can also add a little honey or your favorite syrup to make the chia pudding sweeter, but the sweetness of the fruit is enough for me.When the pudding is ready, take it out of the refrigerator, put it in a bowl or a pretty glass, add a layer of freshly cut fruit and decorate with nuts or mint leaves.This chia pudding recipe is shown in one large serving.
